Fall Soup Party

Saturday, October 4, 2008

Today we were invited to a Fall Soup party! One of Bri's good friends from high school who is also a Brian but known as the "Beave" had us up to his home in Farmington, NH! It was a really cute farmhouse built in 1901 with a huge backyard and perfect set up for a party. We got to meet up with so many of Brian's friends from high school and their wives and kids and got to sample some yummy soups. My favorite was a butternut curry soup!

Molly had a great time - the night was topped off with glow necklaces and bracelets, roasting marshmallows, and fireworks for the kiddos! We made our first soup ever (I picked an easy one) and it came out pretty good! Here's the recipe we found:

FRENCH ONION SOUP

5-6 sweet onions2 cans beef broth1 cube beef bouilliontexas toast (cheese optional)1 tbsp butterprovolone cheesesalt and pepper
Melt butter in skillet and saute onions until golden brown. In sauce pan add onions, beef broth, and beef bouillion. Simmer for about 20 minutes.
Cook toast according to package. Once soup has simmered, add to crock. Cut toast in half and place on top and submerge into soup in crock.
Cover with provolone cheese and bake in oven for 5-7 minutes until cheese is golden brown.
Enjoy!
